Choosing A Yoghurt Maker

When I was growing up in West Clare my grandmother used to make yoghurt. She didn’t make it all the time, but I have fond recollections of plain natural yoghurt with jam. My grandfather had a farm and even after he sold it we used to get fresh unpasteurised milk from a local farmer, so we had no shortage of fresh milk.

My grandmother had some kind of electrical yoghurt maker, though I’ve absolutely no idea what make or model it was.

30 years later yoghurt is part of my daily diet – I usually have at least one a day.

So I’m now seriously considering making my own.

The problem is that in 2012 there are a lot of different yoghurt makers on the market and they not only vary in make, model and price, but also in their basic functionality.

First off there are two basic types of machine available.

You can choose to either make a single large batch of yoghurt eg. a litre of it at a time, or opt for a device that makes individual pots. SKG models seem to be pretty popular on eBay and are incredibly cheap, though I’ve no idea how good or bad they are. Easiyo, for example, uses its own proprietary formula that you have to get from them. (Think of it as the Nespresso of yoghurt making – easy to do, but total vendor lock-in)

Choosing between those two types of machine is pretty easy for me. I’m not going to be making yoghurt to feed an army, so I’d get a machine that does individual pots.

But even when you’ve made that basic decision you’re still faced with a pretty wide choice of devices.

Some models have timers, some don’t. Some have an automatic shutdown, others claim to make the yoghurt faster than others etc., etc. It’s really confusing!

I’ve been checking out the features on a lot of the models available and I’m probably more confused now than I was when I started!

Fresh Salad Addiction

Over the past couple of weeks I haven’t been sticking as closely to the Tesco Diets meal plans as before. That does not mean that I’ve reverted to eating badly, though it does mean that I’ve probably been a bit badly behaved at times.

However, on the plus side, I’ve rediscovered my love for salad.

I’ve never been that good at following salad recipes verbatim. I tend to “tweak” them according to what I have available and my personal preferences. For example, I like garlic, so I’ll usually include more garlic than most people would.

Creating your own salad is nice. It doesn’t take long and if you have a reasonable selection of fresh vegetables it can taste really good.

Typical ingredients include fresh peppers, onion (red is preferable, but white works fine), garlic,mushrooms, hard boiled egg, grated carrot, olives, mixed salad leaves and a can of tuna (preferably in olive oil).

I rarely use prepared salad dressings. I’m happier to simply throw a bit of virgin olive oil and balsamic vinegar over the salad.

To add a bit of colour and taste a few sprigs of freshly cut herbs from the plants I keep in the kitchen add a nice finishing touch – parsley seems to grow well for me, though I’ve had mixed experiences with other herbs – they have an annoying habit of dying on me!

Quick And Easy Porridge From Alpen

Alpen, which is owned by Weetabix (I only found this out just recently), is best known as a line of muesli. When I was growing up Alpen was considered a luxury product. I’m not sure if it still is, but it’s definitely as cheap to buy now, as many of the alternatives.

So what about porridge?

Alpen recently launched a range of quick and easy (and tasty) porridge.

Bottom line – it’s got tasty ingredients, but it’s idiot-proof to prepare.

Preparation is pretty simple.

Grab a sachet. Open it and chuck the contents into a microwave friendly bowl.

(Word of warning, however, opening the sachets isn’t as simple as ripping them open. I tried that. I couldn’t open them. I ended up resorting to using a scissors.)

Fill the sachet with milk up to the line and then pour that over the porridge in the bowl. Mix it and then microwave it for 2 minutes.

2 minutes later you’ll have a very tasty breakfast!

Nutrition-wise the porridge is pretty good at only 155 calories

Seafood, Sun, Sand And A Weight Loss Goal

I’ve been on holidays for the last week or so in Budva, Montenegro.

It’s a really lovely spot and it was nice to be able to “recharge” in the sun.

Of course no holiday would be complete without a mention of the food and its impact on my diet.

Breakfast in the hotel was pretty good. They’d a good choice of cold cuts, cheese, muesli and scrambled eggs. Some of the mornings I opted for cereal with some juice. The coffee, unfortunately, was pretty awful, so I’d usually end up making a trip to the hotel’s main bar after breakfast for coffee. Other mornings I’d “stock up” with scrambled eggs and a local sausage. It might not have been the healthiest option, but a good solid breakfast keeps you going for the rest of the day.

Lunch and dinner was quite varied. Budva has a lot of really good restaurants to suit most tastes. One of my favourites is Porto, which is down by the water. They have some absolutely fantastic seafood which you can wash down with some of the local wine.

Seafood brochettes with potatoes. Probably not the healthiest, but it was absolutely delicious. Do I feel guilty? Maybe a small bit, but I’m also very aware of the fact that the overall “healthiness” of the food I was eating while in Montenegro was significantly better than what I’d eat here in Ireland. Most days I’d have had food made with fresh vegetables and possibly a salad of some kind. Going swimming almost every single day, walking quite a bit and generally getting outside and relaxing did me good. I also slept more than I would normally (the upside to not having either a decent internet connection, speaking the local language or having English language films to watch!)

After a little over a week away I came back to Ireland and weighed myself. Yes, my weight had gone up a bit, but once I switched back to eating “normally” it dropped a couple of kg in a couple of days.

I’m now back on my “old” diet (more or less).

But I’m also very conscious of my failures to date. Sure, I’ve lost some weight over the last few months, but the weight loss has neither been consistent or in line with my own goals. I need to “up the ante” a bit if I’m to “win” the “war” with my body. (Did I just write that? Oh help!)

So what do I need to do?

Eating habits are an obvious one. If I stick to the Tesco Diet my daily calorie intake will be around 2000 to 2300 calories. While that’s not “bad” it’s still not low enough to have any tangible impact on my weight loss. Sure, my weight will remain stable and possibly go down a bit, but if I “misbehave” I end up losing any of my gains (well they’re losses, but you get the idea).

I’ve been trying to find a lower calorie diet that works in a similar fashion to the Tesco Diet. So far I haven’t found one. In the interim I can always “play” with the options on the Tesco Diet options to reduce my daily intake, though that’s hardly ideal.

What else?

Obviously I need to exercise more. Well “more” night be the best word. The sentence might be better and more honest if I were to reword it to:

I need to exercise

Since I’ve an aversion to walking in circles I’ll be using my elliptical trainer more. I also need to use my weights as well. At the moment I’m able to do a 15 minute session on the elliptical trainer without getting too bored and pushing it a bit in terms of pace I’m working up a good heart rate and building up a sweat. Ideally I’d need to get those sessions up to 30 minutes, but I’m also very conscious of not overdoing it too quickly, because I’ll simply stop.

What’s the “end game”?

There’s no point doing all of this without a concrete goal. While I was in Montenegro I realised that the goal was something very simple, yet difficult to accomplish.

I need to lose about 33% of my body weight.

Now I’ve got a goal I just need to work towards it!

Smoked Salmon And Brown Bread

I love smoked salmon. It’s one of my favourite foods, though it’s not one that I get to eat that often.

Salmon is also pretty good in terms of calories, so not only does it taste good it’s not going to kill you 🙂 (Bonus!)

At the moment Dunnes Stores is doing a very attractive offer on a “bundle”. If you buy a packet of smoked salmon they’ll “throw in” a packet of brown bread.

So instead of paying 4 euro for salmon and another 2 euro (give or take) for a good quality brown bread, you can get both for 4 euro.

It’s an attractive offer and all you need then is some lemon and you’re all set.

Smoked Salmon And Brown Bread

A simple yet delicious snack

Ingredients

  • 1 Lemon
  • 50 g Smoked salmon
  • 2 slices McCambridge Stoneground wholewheat bread

Instructions

  1. Slice the lemon.
  2. Remove the smoked salmon slices from the packet and put on a plate.
  3. Squeeze lemon juice over them
  4. Place the salmon on the bread
  5. Enjoy!

Recipe Notes

Butter obviously improves the overall taste if you have it, though I find that salmon on a good bread doesn’t really need it. Ultimately that’s a matter of personal preference.

Smoked salmon with brown bread really doesn’t need much more than the lemon to bring out the fish’s flavour. Of course you could add cream cheese and maybe garnish it with a bit of dill or similar, but personally I don’t think it really needs it. The salmon by itself is very tasty.

Most Irish supermarkets will stock Irish smoked salmon, though you’ll often find that the cheaper options are imported. You can do pretty much the same thing with smoked trout.

Get Exercise While Eating

Yes – you can “exercise” while you eat.

Some Tasty Fresh Pasta And Sauce

I don’t normally shop in Dunnes Stores. I find the range of products they have on offer a bit lacking compared to SuperQuinn and the quality of their meat and vegetables leaves quite a bit to be desired.

The other evening, however, I needed to get some shopping, as I’d been travelling for a couple of weeks and there was very little in the way of fresh food at home.

While browsing the aisles in my local Dunnes I came across an interesting offer. You could get Giovanni Rana pasta sauce and fresh pasta for 3 euro. I love fresh pasta, but I don’t get it that often, as it doesn’t keep for very long.

The sauce that caught my eye was this one:

It’s a “creamy sauce with handpicked porcini mushrooms” and it’s absolutely fantastic.

I grabbed a packet of the fresh pasta  – a nice tagliatelle:

fresh tagliatelle pastaSince it’s fresh pasta the cooking time is minimal – about 2 minutes instead of the 8 to 10 minutes you’d have with dry pasta.

The sauce pot has enough for two people, so I simply split and the pasta out over two days.

How does it weigh in calorie wise?

About 600 calories for the sauce per serving plus whatever you get in the pasta.

But it’s tasty and that’s what I wanted more than anything else.

Being on a diet of any kind can be incredibly boring, so being able to break out a small bit and actually enjoy something quite decadent from time to time helps keep me sane.
